Wimbledon, one of the most well loved tournaments in the tennis calendar starts today. For me, Wimbledon is typically British and conjures up images of grass courts, sunny days, not to mention the strawberries and cream. I have never been a tennis player, but I really enjoy watching this tournament and can’t wait to see what this year has in store.
I love baking, so I thought there was no better way to celebrate the annual wonder that is Wimbledon, than by baking a cake!
Wanting something that would reflect what Wimbledon is known for, I decided on a Pimm’s strawberry dream cake!
Baby and I popped to our local Tesco to pick up all of our bits we needed for our creation. I can spend so long in these aisles finding things for my next creation
Ingredients for cake
- 225g golden caster sugar
- 225g self raising flour
- 225g unsalted butter
- 4 eggs
- zest of 1 orange
- 1 tsp almond extract
- 1 tsp baking powder
- 2 tbsp milk
For the mascarpone cream
- 200g light mascarpone
- 100ml whipping cream
- 2 tbsp icing sugar
- 1 tbsp orange juice
- zest from 1/2 an orange
For the Pimm’s syrup
- 300ml Pimm’s
- 100g caster sugar
- 2 tbsp orange juice
To decorate and fill
- 300g strawberries, sliced lengthways
- fresh mint
- ribboned cucumber
- 1/2 zested orange
Instructions
- Preheat oven to 180º, 160º fan, Gas mark 4.
- Grease and line two 8″ cake tins.
- Use an electric mixer to beat the butter and sugar until smooth.
- Add in egg, almond extract and zest while mixing continuously.
- Add the dry ingredients and fold in with metal spoon.
- Stir in milk.
- Half the mixture and pop in the tins. Bake for 20-25 minutes until golden and just starting to come away from the side of the tin.
- Leave in tin for 5-10 minutes before turning out to cool properly on a wire rack.
Now you can make the Pimm’s syrup
- Put the ingredients in a small pan and warm through until all the sugar has melted.
- Then bring to boil and boil for 15 minutes. Stir occasionally.
- When reduced by half, set aside to cool.
Time for the cream
- Put mascarpone, cream, orange juice, most of the zest and icing sugar and beat until smooth.
Creating your masterpiece

- Pop one cake on a serving dish and drizzle over 2 tbsp of the syrup.

- Pipe the cream onto the top of that cake.

- Put around 3/4 of the strawberries onto the cream.

- Place the other half of cake on top.

- Pipe or use a palette knife to spread the remaining cream on the top.
- Decorate with cucumber, mint, orange zest and strawberries.
I think it turned out quite well in the end and I assured it was yummy.
