If you are a reader over at my blog Mr and Mrs T Plus Three then you will know I am quite the fan of healthy and clean eating. I do like to have a supply of snacks ready for that dreaded afternoon slump. Protein energy balls are amazing but sometimes nothing will beat the crunch of a cookie accompanied by a nice cup of tea.
How very British of me!
These little morsels of loveliness are the perfect alternative to cracking open a fat-laden packet of digestive biscuits and contain chia seeds and raw chocolate powder for the ultimate energy boost.
Ingredients
Makes 10 cookies
- 1 cup of almonds
- 1 cup of hazelnuts
- 1 cup of quinoa or buckwheat flour (I used buckwheat)
- 1/3 of a cup of pure maple syrup
- 1/4 of a cup of medjool dates
- 1/4 of a cup of water
- 3 heaped tablespoons of raw cacao powder
- 3 tablespoons of chia seeds
- 2 tablespoons of coconut oil
Method
- Preheat your oven to 180 degrees and line a baking tray with parchment paper.
- Pop the nuts into a food processor or if you have a nutribullet use the milling blade-it will make seriously short work of grinding your nuts down to a flour.
- Transfer the nut powder to your food processor and add the remainder of the ingredients until a sticky cookie dough forms.
- Scoop out a tablespoon of the mix at a time and with slightly damp hands shape into balls and then flatten with the palm of your hand. You want to get these nice and thin so that they are nice and crunchy once cooked.
- Bake for around 20 mins or until cookies are brown and even in colour.
- Enjoy with a nice cup of tea!
