Baby and I were challenged by Persil to make one of their Cook With The Kids recipes. There were sweet and savoury recipes to choose from, but as soon as we saw the Ice Cream Cupcakes, we knew it had to be them!
Here is what you will need.
Ingredients
For the cupcakes
150g self-raising flour
150 softened butter
125g caster sugar
2 whisked eggs
2-3 tbsp vanilla extract
1.5 tbsp milk
For the frosting
400g icing sugar
150 softened butter
1.5 tsp vanilla extract
sprinkles/chocolate flakes
1 tbsp milk
12 flat bottomed ice cream cones
1. Pre-heat the oven to 180° / 160 ° fan / gas 4.
2. Sift the flour and set aside. In a large bowl combine butter and sugar.
3. Add 2 tbsp of the flour plus the eggs to the sugar mix. Beat to combine. Add the rest of the flour, the vanilla extract and 1 tbsp milk, stirring firmly but don’t beat.
4. Pop 12 cones in a cupcake tin/baking tray and fill each half way with the cake mix.
5. Pop in the oven and bake for 18-20 minutes, then place them on a wire rack to cool thoroughly.
To make the frosting
6. Sift the icing sugar into a large bowl, add butter, vanilla and 1.5 tbsp milk. Beat until you have a smooth mix, Then pop in the fridge to stiffen up. About 15 minutes should do.
7. When the cakes are cool, simply spread the frosting on top or if you are feeling posh you could pipe it on.
8. Then get to work decorating them, sprinkles, chocolate flakes, whatever you fancy!
They were very yummy! I was so surprised the wafer cones didn’t burn and I would never have thought of using cones as cake cases.
