We adore baking, I think it’s probably one of Ava’s most favourite things to do. We often bake after nursery and take our goodies to friends or neighbours. So when Sun-Pat asked us if we wanted to be involved in their campaign and rustle up something yummy, we were in!
Ava has always loved peanut butter, so she was very excited about this particular challenge. If you ask her what she wants to be when she grows up, she would first tell you that she is already grown up, and would then probably plump for a Princess. Although to ditch the stereotype a little, she would be like Nerida from Brave. She would be an all-action Princess, running, climbing and riding. Her endless energy would make sure she excelled in her role too!
She is lucky enough to share a pony, who she rides a few times a week and so I thought it would be great to make something that we could easily take with us to the stables, to keep her energy up and that was obviously yummy too!
We decided to make Peanut Butter Oatmeal Energy Bites. They are super quick to make as they are no bake and are great for getting little people involved too.
Peanut Butter Oatmeal Energy Bites
Ingredients
- 1 cup oats
- ⅔ cup crushed nuts or shredded coconut
- ½ cup mini chocolate chips
- ½ cup peanut butter
- ⅓ cup honey
- 1 tsp vanilla
- 1 tbsp chia seeds

Instructions
- Combine all ingredients in a large bowl.
- Roll and compress the mixture into small balls (about 1″ rounds) and place on baking paper.
- Refrigerate a few minutes until firm and then transfer to an air tight container.
- Refrigerate. They will keep for up to one week.
There you have it! It couldn’t be easier and Ava really loved getting involved. They were ready to try within around 10 minutes and so kids will be able to taste the fruits of their labour, almost immediately. Her verdict was they they were yummy and so we took some of them to the stables on our next visit.
Ava is always hungry when I collect her from nursery so I pop a few in my bag and I then have the perfect, healthy, hunger beater ready and waiting for her.
