Baby and I both love baking, so a few days ago we made these yummy chocolate brownies. They were so quick and easy to make, definitely one to do when you haven’t got much time.
Being on the Cambridge diet, there were none for me, but Baby and the neighbours enjoyed them!
The recipe uses the all in one mixing method, which is music to any busy parent’s ears!

Ingredients
- 150g self-raising flour
- 125g caster sugar
- 125g softened butter
- 3 medium eggs
- 35g cocoa powder
- 1 tsp baking powder
Method
- Preheat the oven to 180°/165° fan/350°F/Gas Mark 4
- Prepare a medium sized square or rectangular tin – approx 25cm square.
- In a bowl or a mixer beat together the flour, baking powder, sugar, cocoa, eggs and butter until soft and thoroughly mixed together. Add a small amount of warm water if it is too dry/thick.
- Put mixture in tin and bake for around 30 minutes, until a skewer comes out clean.
- Leave to cool in tin for at least 5 minutes before turning out onto a rack.
Chocolate butter icing
Ingredients
- 100g butter
- 150g icing sugar
- 50g cocoa powder
- warm water
Method
- Super easy, just mix it all together, only adding drop of warm water if you want a looser consistency.
- Spread on the cooled brownie and slice.

I am totally naff at making brownies so will have to give this recipe a go! I think brownies are my all time fave type of cakey treat!
