I love a challenge and we were recently challenged by the team at Salter to make mince pies! I love baking, but think I have only made mince pies once before. Salter send us some kitchen equipment to help and they even sent us the recipe (although I upped the mincemeat quote!).
The recipe was different to the one I have used before, as there was no liquid added to the pastry. This made it slightly trickier to deal with (crumbly), but you will be rewarded in taste later on, believe me! (I allowed myself one bite!).
Mr Hubby suggested I buy the pastry, but I don’t have a problem with making pastry (probably my cold hands!), so I always do it from scratch. Here is the process captured on camera.
Although the pastry was a little trickier to deal with than normal pastry, when I stuck to using my hands and the side of a knife it was fine o.k. In our temperamental oven they took 15 minutes, so I would check them around this time. The finished result…
The taste was fabulous! The best mince pies I have ever had, despite the look being a little rustic (due to the lack of rolling and cutting possible).

It is quite rewarding to make your own mince pies, isn’t it? That’s what I tell myself after eating four or five with my cup of tea! I love my Salter scales, but yours look a lot more high tech than my basic ones. #TastyTuesdays

Ooh Gabby and I were talking about making mince pies earlier – and I was thinking on second thought…it looks a bit tricky! You’ve made me change my mind, think we might even give it a go tomorrow while Dad’s at the football!!
