Some friends came round to visit Baby and I on Monday, so it was a great excuse to bake some cakes! I love carrot cake, but I have never actually made it. I always think it will be such a pain, grating all the carrots, but I had a basic recipe, so decided to give it a go. I did adapt the recipe that I found, so here is what I came up with. Actually grating the carrots was super quick.
